Hi there, does anyone know any good recipes for hot smoking marinades, rubs etc?
I was at a barbecue in london the other day and I tasted something that was really great. I just couldnt figure out what it was exactly. Was it smoked chicken that had been BBQ d or just marinaded then kind of smoke roasted on the grill?
The chefs looked really busy so I didnt ask.
I'm going to build a box oven BBQ so that we can do slow roasting large cuts of meat as well as bangers and burgers etc. Anyone got any tips (i'm gonna get it made by a steel fabricator so it should be pretty solid - just need make sure it doesnt come out too heavy!
