Quick Salmon Omlette

Quick Salmon Omlette

This is a very quick and easy dish to make, suitable for 1 person, with a total of approx 400 calories.

Ingredients:
105 g canned pink Alaska salmon drained, flaked
2 fresh eggs
2 tablespoon of Sour cream or fromage frais
1/2 teaspoon of freshly chopped tarragon
Salt and white pepper to taste
7g unsalted butter

Instruction:
1. Drain the can of salmon and set aside.

2. Beat together the eggs, cream or fromage frais, tarragon and season with the salt & pepper.

3. Melt the butter in a non-stick or omelette pan and add the beaten eggs, cooking over a moderate heat until the base is set.

4. Arrange the canned salmon over the soft top of the omelette and place the pan under a preheated grill until omelette is set.

5. Once cooked garnish with salad and serve whilst hot.
